Breakfast Burrito



Burrito is a  Mexican food consist of a soft tortilla wrapped or folded .It is filled with a combination of different ingredients like meat,refried beans,rice,salsa ,sour cream and any other variations.

I made a breakfast burrito,A variety of American breakfast composed of sausage,scrambled eggs,refried beans,cheese ,mushrooms,pepper and any other ingredients depending on what you have in your kitchen.

Ingredients
1/2 package of  Jimmy Dean Sausage(hot or regular).Slice the other half and Keep in the freezer for  the next breakfast.
4 eggs
1 tbsp oil 
1/4 cup milk
shredded cheddar cheese
Sour Cream
refried beans(optional)
flour tortillas 
Salt and pepper to taste
Salsa/Hot Sauce.

Directions:
  • Fry the sausage in a skillet. Drain off fat.Set aside
  • Beat egg, milk in a bowl .Add salt and pepper just a little to taste.Heat oil ,add egg,cook while stirring.Remove from fire .Mix with sausage.Set aside.
  • Heat Flour Tortillas in a pan or in a microwave on a plate covered with a paper towel.
  • Fill each tortilla with cheese,egg/sausage mixture,refried beans,sour cream.Roll .
  • Serve warm with salsa or hot sauce.

Mango Crepe


Ingredients
1 cup all-purpose flour2  large eggs
1/2 tbsp sugar
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter or vegetable oil.
Mango, choppped

Mango Sauce
1 whole mango
1 tbsp corn starch dissolved in 1 cup water
1/4 cup white sugar

Peel, slice and remove seed of the mango.Pour in a blender .Add all the ingredients.Puree. Transfer to a small pan,cook into medium fire until thicken.Remove from fire and set aside


Directions:
  • Beat egg slightly.
  • In a large mixing bowl combine sugar salt and flour.Add milk,water,ggs and melted butter. Whisk until well blended.
  • Heat non sticky frying pan.Slightly oil the  pan over medium heat.
  • Pour batter using 1/4 cup for each crepe. Tilt the pan with a circular motion to coat the surface evenly.
  • Cook  until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  • Place the crepe  on a plate.Add chopped mango and  mango sauce. Roll or fold.
  • Serve warm with mango sauce and nutella (optional).



Nutella Banana Crepe

If you are tired of eating the same old pancake why not try crepes for a change.I wonder why many people don't make it at home.Crepes are  easy to make  just like pancakes.You can  serve it rolled ,folded, filled with any fruit or vegetables of your choice ,jam ,honey or just chocolates .I made some nutella, banana and mango crepes for breakfast and snack for my kids after school . 


Ingredients

1 cup all-purpose flour2  large eggs
1/2 tbsp sugar
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter or vegetable oil.

bananas thinly sliced

Directions
  • Beat egg slightly.
  • In a large mixing bowl combine sugar salt and flour.Mix  milk,egg ,melted butter and water.Add to the dry ingredients gradually  to avoid lumps.Whisk until well blended. 
  • Heat non sticky frying pan.Slightly oil the  pan over medium heat.
  • Pour batter using 1/4 cup for each crepe. Tilt the pan with a circular motion to coat the surface evenly.
  • Cook  until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  • Spread the nutella on the crepe, add the banana and roll or fold.
  • Sprinkle with powdered sugar and a bit of nutella on top (optional).
  • Serve warm or at room temperature.

Chicken Barbeque





If you want Chicken barbecue but don't want to spend time outside grilling .One of the easisest way is to cook it in the oven  and the taste is still good minus the smokey flavor of course . I do marinate the chicken with whatever available ingredients I have in the pantry like lemon ,garlic powder ,catchup,soysauce ,oyster sauce and spices. Serve it with  rice and any veggies  of your choice for side dish.

Beef Liver with Spinach



Beef liver , it is either you hate it or you love it.Though it is loaded with nutirents and often recommended for its iron content .it's not a popular meal for most of us.  Beef liver can be healthy for most individuals as long as you eat it only in moderation and make sure it is thoroughly cooked.In my home, nobody likes it  except me  so I eat  what I cook ,they don't know what they are missing.I like it  fry seasoned with lemon pepper seasoning salt ,steak ,sauteed added with some vegetables like spinach  just like my recipe above.So simple but loaded with nutrients.
